Toasty open-faced tuna melts with sharp cheddar, made almost entirely from the pantry.

Ingredients

  • 2 cans tuna (5 oz each)
  • 1/3 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 4 slices bread
  • 1/4 cup diced onion or celery (optional)

Method

1. Drain 2 cans (5 oz each) tuna and flake into a bowl. 2. Stir in 1/3 cup mayonnaise, and 1/4 cup diced onion or celery if you have it. Season with salt and pepper. 3. Lightly toast 4 slices of bread. 4. Heat the broiler. Pile the tuna onto the toast and top each with a handful of cheddar (about 1 cup total). 5. Broil 2-3 minutes, until the cheese is bubbling and golden. Watch closely so it doesn't burn. 6. Serve hot, on their own or with a handful of chips or a quick salad.
