- • 4 bone-in, skin-on chicken thighs
- • 3 tablespoons Dijon mustard (without garlic — check label)
- • 2 tablespoons honey (alfalfa, cotton, or clover)
- • 2 tablespoons olive oil
- • 1 teaspoon smoked paprika
- • 1 teaspoon fresh thyme leaves
- • Salt and black pepper to taste
- • Fresh chives to serve
Method
1. Preheat oven to 400°F (200°C).
2. Whisk together mustard, honey, olive oil, paprika, and thyme into a smooth glaze.
3. Pat chicken thighs dry. Season with salt and pepper.
4. Coat each thigh generously with the glaze and place skin-side up in a baking dish.
5. Bake uncovered 38–42 minutes until skin is golden and the internal temperature reaches 165°F.
6. Spoon any pan juices over the chicken and rest 5 minutes.
