
Asian Ground Chicken with Bamboo Shoots and Bell Pepper

A fast, boldly flavored ground chicken dish with tender bamboo shoots and sweet bell pepper in a ginger-honey sauce. A great change of pace.

- • 3/4 lb (340g) ground chicken
- • 1 cup bamboo shoots, drained and sliced
- • 2 bell peppers, diced
- • 3 tablespoons scallion greens, thinly sliced
- • 2 tablespoons garlic-infused oil
- • 2 tablespoons fresh ginger, grated
- • 2 tablespoons apple cider vinegar
- • 1 tablespoon honey
- • Salt and black pepper to taste
Method
1. Whisk together apple cider vinegar and honey. Set sauce aside.
2. Heat garlic-infused oil in a wok or skillet over medium-high heat.
3. Add ground chicken, breaking it up as it cooks, 6–7 minutes until cooked through and lightly browned.
4. Add ginger and bell peppers. Stir-fry 3 minutes.
5. Add bamboo shoots and stir-fry 2 more minutes.
6. Pour in the sauce and toss everything together over high heat for 1 minute.
7. Season with salt and pepper. Serve topped with scallion greens.
