Herb-Marinated Steak with Roasted Bell Peppers and Zucchini

Method
01Whisk together 3 tablespoons olive oil, lemon juice, rosemary, thyme, paprika, salt, and pepper. Add steak and marinate at least 30 minutes (up to overnight, refrigerated).
02Preheat oven to 425°F (220°C). Toss bell peppers and zucchini with remaining olive oil, salt, and pepper. Spread on a baking sheet and roast 20 minutes until tender and lightly caramelized.
03Heat a cast iron or heavy skillet over very high heat. Remove steak from marinade and shake off excess.
04Sear steak 3–4 minutes per side for medium-rare. Rest 8 minutes before slicing.
05Slice steak thinly against the grain. Serve over roasted vegetables and finish with fresh parsley.
