
Asian Beef Broth Bowl with Ginger and Vegetables

- • 1/2 lb (225g) sirloin or flank steak, sliced very thin
- • 3 cups homemade bone broth
- • 1 large carrot, peeled and sliced into thin rounds
- • 2 cups fresh spinach
- • 2 tablespoons fresh ginger, grated
- • 3 tablespoons scallion greens, thinly sliced
- • 1 tablespoon white wine vinegar
- • 1/2 teaspoon turmeric (optional, for color and anti-inflammatory benefit)
- • Salt and white pepper to taste
Method
1. Bring broth to a simmer in a medium saucepan. Add ginger and turmeric. Simmer 8 minutes.
2. Add carrot slices and cook 5–6 minutes until tender.
3. Add beef slices and cook 2–3 minutes until just cooked through — do not boil.
4. Stir in spinach and let it wilt, about 1 minute.
5. Add white wine vinegar and season with salt and white pepper.
6. Ladle into deep bowls and top with scallion greens.
