Method
01Combine ground beef, egg, oregano, basil, paprika, salt, and pepper. Mix gently — do not overwork.
02Roll into 1.5-inch meatballs (about 12 total).
03Heat olive oil in a wide saucepan over medium-high heat. Brown meatballs on all sides, about 5 minutes. Remove and set aside.
04Add broth to the pan and bring to a gentle simmer, scraping up any browned bits.
05Return meatballs to the broth. Simmer uncovered 10–12 minutes until cooked through.
06Add spinach and stir gently until just wilted, about 1 minute.
07Ladle into bowls with meatballs and broth. Finish with fresh parsley.
