Ginger Beef Stir-Fry with Bell Peppers
A quick, bold weeknight stir-fry with thinly sliced beef, sweet cooked bell peppers, and a bright ginger-honey sauce built without soy sauce.

Method
01Whisk together apple cider vinegar and honey in a small bowl. Set sauce aside.
02Season beef slices with salt and pepper.
03Heat garlic-infused oil in a wok or heavy skillet over very high heat until just smoking.
04Add beef in a single layer and cook without moving for 1–2 minutes until browned. Stir and cook 1 more minute. Remove beef and set aside.
05Add olive oil and bell peppers to the same pan. Stir-fry over high heat for 3–4 minutes until tender with a little char.
06Add ginger and stir-fry 30 seconds until fragrant.
07Return beef to the pan, pour in the sauce, and toss over high heat for 1 minute until everything is coated.
08Serve immediately, topped with scallion greens.
