
Ginger Chicken Stir-Fry with Snow Peas and Bell Peppers

- • 3/4 lb (340g) boneless chicken thighs or breasts, thinly sliced
- • 10 snow peas, trimmed (5 per person — within Low FODMAP limit)
- • 2 bell peppers (red and orange), thinly sliced
- • 3 tablespoons scallion greens, sliced
- • 2 tablespoons garlic-infused oil
- • 2 tablespoons fresh ginger, grated
- • 2 tablespoons white wine vinegar
- • 1 tablespoon honey
- • 1 tablespoon olive oil
- • Salt and black pepper to taste
Method
1. Whisk together white wine vinegar and honey. Set sauce aside.
2. Season chicken with salt and pepper.
3. Heat garlic-infused oil in a wok or large skillet over high heat.
4. Add chicken in a single layer and cook without moving 2–3 minutes. Stir and cook 2 more minutes until cooked through. Remove.
5. Add olive oil, bell peppers, and ginger. Stir-fry 3 minutes.
6. Add snow peas and stir-fry 1–2 minutes — they should stay bright green.
7. Return chicken to the pan, pour in the sauce, and toss over high heat 1 minute.
8. Serve topped with scallion greens.
