
Slow Cooker Tuscan Chicken Thighs

Bone-in chicken thighs braised all day in a rich tomato and white wine sauce with sun-dried tomatoes, spinach, and Parmesan. The kind of meal that makes your house smell incredible.

- • 2 lbs bone-in chicken thighs
- • 1 can (14.5 oz) crushed tomatoes
- • 1/2 cup chicken broth
- • 1/3 cup sun-dried tomatoes, chopped
- • 3 cups fresh spinach
- • 1/4 cup heavy cream
- • 1/2 cup grated Parmesan cheese
- • 4 cloves garlic, minced
- • 1.5 tsp Italian seasoning
Method
1. Season chicken thighs generously on both sides with Italian seasoning, garlic powder, salt, and pepper.
2. If time permits, sear chicken thighs in a hot skillet with olive oil 3 minutes per side until golden. This step adds flavor but is optional.
3. Place chicken in the slow cooker. Add minced garlic, diced onion, crushed tomatoes, chicken broth, sun-dried tomatoes, and a splash of white wine.
4. Cook on LOW for 5 to 6 hours or HIGH for 3 hours until chicken is fall-off-the-bone tender.
5. Remove chicken and shred or leave whole. Stir heavy cream and Parmesan into the sauce.
6. Add fresh spinach to the slow cooker and stir until wilted, about 2 minutes.
7. Return chicken to the sauce. Serve over pasta, mashed potatoes, or crusty bread.
