Method
Season chicken thighs generously on both sides with Italian seasoning, garlic powder, salt, and pepper.
If time permits, sear chicken thighs in a hot skillet with olive oil 3 minutes per side until golden. This step adds flavor but is optional.
Place chicken in the slow cooker. Add minced garlic, diced onion, crushed tomatoes, chicken broth, sun-dried tomatoes, and a splash of white wine.
Cook on LOW for 5 to 6 hours or HIGH for 3 hours until chicken is fall-off-the-bone tender.
Remove chicken and shred or leave whole. Stir heavy cream and Parmesan into the sauce.
Add fresh spinach to the slow cooker and stir until wilted, about 2 minutes.
Return chicken to the sauce. Serve over pasta, mashed potatoes, or crusty bread.
