
Slow Cooker Beef Stew

- • 2 lbs beef stew meat
- • 3 cups beef broth
- • 3 cups mixed vegetables
- • 2 bay leaves
- • 1 tablespoon vegetable oil
- • Salt and black pepper
Method
1. Cut 2 lbs beef stew meat into 1-inch cubes and season with salt and pepper.
2. Heat 1 tablespoon oil in a skillet and brown beef on all sides (5 minutes).
3. Transfer beef to slow cooker and add 3 cups beef broth.
4. Add 3 cups chopped vegetables (carrots, potatoes, onion, celery) and 2 bay leaves.
5. Cook on LOW for 6-8 hours until beef is very tender.
6. Remove bay leaves and serve hot with crusty bread.
