Method
01Rinse 1.5 cups brown lentils.
02Heat 1 tablespoon oil in a pot and saute 1 diced onion and 1 diced bell pepper until softened, about 4 minutes. Add 2 minced garlic cloves and cook 1 minute more.
03Add the lentils and 3 cups vegetable broth. Bring to a boil, then simmer 15-18 minutes until lentils are tender and most of the liquid is absorbed.
04Stir in 3/4 cup ketchup, 1 tablespoon tomato paste, 1 tablespoon brown sugar, 1 tablespoon yellow mustard, and 1 teaspoon smoked paprika. Simmer 5 more minutes until thick.
05Season with salt and pepper to taste.
06Spoon onto toasted buns and serve.
