
Peanut Butter Noodles

- • 12 oz spaghetti
- • 1/2 cup peanut butter
- • 3 tbsp soy sauce
- • 1 tbsp honey
- • 1 clove garlic
- • 1 cup frozen edamame
Method
1. Bring a large pot of water to a boil and cook 12 oz spaghetti until tender. Reserve 1/2 cup pasta water, then drain.
2. While the pasta cooks, whisk 1/2 cup peanut butter, 3 tablespoons soy sauce, 1 tablespoon honey, and 1 minced garlic clove in a large bowl.
3. Loosen the sauce with a few tablespoons of the hot pasta water until it's pourable.
4. Add 1 cup frozen edamame to the pasta for the last 2 minutes of cooking, then drain everything.
5. Toss the hot noodles and edamame in the sauce, adding more pasta water as needed. Season with a pinch of salt.
6. Serve warm or at room temperature, topped with chopped peanuts or green onion if you have them.
