Ingredients

  • 2 tilapia, cod, or white fish fillets
  • 3 bell peppers (red, yellow, orange), sliced
  • 4 tablespoons olive oil
  • 1.5 teaspoons smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1 tablespoon apple cider vinegar
  • Fresh cilantro or parsley to serve
  • Salt and black pepper to taste

Method

1. Preheat oven to 425°F (220°C). 2. Toss sliced bell peppers with 2 tablespoons olive oil, 1/2 teaspoon paprika, salt, and pepper. Spread on a baking sheet and roast 15 minutes. 3. Meanwhile, mix remaining paprika, cumin, oregano, salt, and pepper with 1 tablespoon olive oil. Rub over both sides of the fish. 4. Push peppers to the sides. Lay fish fillets in the center of the baking sheet. 5. Roast everything 10–12 minutes until fish is opaque and flakes easily. 6. Drizzle peppers with apple cider vinegar and remaining olive oil. Toss gently. 7. Plate fish over peppers and finish with cilantro or parsley.
