Pork and Bell Pepper Egg Bake
A hearty skillet dinner where savory ground pork and sweet bell pepper form the base for baked eggs nestled right in the pan. Breakfast-for-dinner done right.

Method
01Preheat oven to 375°F (190°C).
02Heat olive oil in an oven-safe skillet over medium-high heat. Cook ground pork, breaking it up, 6–7 minutes until browned. Drain excess fat.
03Add bell peppers and cook 3 minutes, stirring.
04Add spinach and stir until wilted, about 1 minute.
05Season the mixture with paprika, cumin, salt, and pepper. Spread evenly in the pan.
06Use a spoon to create 4 wells in the mixture. Crack one egg into each well.
07Transfer to oven and bake 10–12 minutes until egg whites are set but yolks are still slightly runny (or cook longer for fully set yolks).
08Serve from the skillet, topped with scallion greens.
