
Pork and Bell Pepper Egg Bake

A hearty skillet dinner where savory ground pork and sweet bell pepper form the base for baked eggs nestled right in the pan. Breakfast-for-dinner done right.

- • 1/2 lb (225g) ground pork
- • 2 bell peppers (red and green), diced
- • 3 cups fresh spinach
- • 4 large eggs
- • 2 tablespoons olive oil
- • 1 teaspoon smoked paprika
- • 1/2 teaspoon ground cumin
- • 2 tablespoons scallion greens, to serve
- • Salt and black pepper to taste
Method
1. Preheat oven to 375°F (190°C).
2. Heat olive oil in an oven-safe skillet over medium-high heat. Cook ground pork, breaking it up, 6–7 minutes until browned. Drain excess fat.
3. Add bell peppers and cook 3 minutes, stirring.
4. Add spinach and stir until wilted, about 1 minute.
5. Season the mixture with paprika, cumin, salt, and pepper. Spread evenly in the pan.
6. Use a spoon to create 4 wells in the mixture. Crack one egg into each well.
7. Transfer to oven and bake 10–12 minutes until egg whites are set but yolks are still slightly runny (or cook longer for fully set yolks).
8. Serve from the skillet, topped with scallion greens.
