
Pork Tenderloin with Herb Oil and Roasted Bell Peppers

- • 1 pork tenderloin (about 1 lb / 450g)
- • 3 bell peppers (assorted colors), cut into wide strips
- • 4 tablespoons olive oil
- • 1 teaspoon dried rosemary
- • 1 teaspoon dried thyme
- • 1 teaspoon smoked paprika
- • Juice of half a lemon
- • Salt and black pepper to taste
- • Fresh parsley to serve
Method
1. Preheat oven to 400°F (200°C).
2. Mix 2 tablespoons olive oil, rosemary, thyme, paprika, salt, and pepper. Rub all over the tenderloin.
3. Toss bell peppers with remaining 2 tablespoons olive oil, salt, and pepper. Spread on a baking sheet.
4. Nestle the tenderloin in the center of the baking sheet among the peppers.
5. Roast 22–25 minutes until pork reaches 145°F internally and peppers are tender and lightly charred.
6. Rest pork 8 minutes before slicing.
7. Slice and serve over roasted peppers, with a squeeze of lemon and fresh parsley.
